rft: rename VentilationSB2005 -> VentilationFactor

other:

• add Manifest-v*.*.toml to .gitignore
  • ignores e.g. Manifest-v1.11.toml
• add [sources] section to docs/Project.toml
  • makes it so that when you instantiate the docs environment for the first time, the docs depend on your local copy of CloudMicrophysics, as opposed to the latest release.
