I use 2 channel dimmer switches (MOES MS105-B 2 gang) for my overhead lights and as far as I can tell, device groups only support single channel brightness sync.
Is there any trick you can suggest to sync 2 different brightness levels between the dimmers besides using HTTP calls? I don't use mqtt or home assistant at this time.

I think we could do this easily with HTTP, but first of all, are Device Groups in Tasmota supporting the feature you request? Our DGR are supposed to be compatible with Tasmota standard.
Tasmota has option 68 to support multiple PWM channels and option 88 to support multiple groups per device. So essentially, it creates a group per PWM channel.
